Its high in protein, high in fiber, low in fat and has only THREE ingredients so even I can make it.  Its eggwhites Scoobystyle!  Cook the fresh cut salsa on medium heat while you are separating the egg whites.  Mix in the eggwhites and stir till they are dry.  Add broccoli.  Quick, easy and healthy meal!</p>

For the DRESSING:<br />
— 3 Tomatoes<br />
— 1-2 Oranges<br />
— 1 Avocado<br />
— 2 cloves of Garlic</p>
<p>For the SALAD:<br />
— 1 head of Romaine Lettuce<br />
— 2 Red Peppers<br />
— 2-4 Carrots (unpeeled if organic, or peeled if inorganic)<br />
— 1-2 Cucumbers (unpeeled if organic, or peeled if inorganic)</p>
<p>* P r e p a r a t i o n *<br />
— 1) To make the dressing, roughly chop the tomatoes, and toss into your Vita-Mix blender, or other high-powered blender of your choice. http://bit.ly/GZsuq or http://bit.ly/3OTXD9</p>
<p>— 2) Use a manual citrus juicer or a citrus hand juicer to squeeze the juice of the orange into the Vitamix as well.</p>
<p>— 3) Roughly chop the avocado and toss into your Vitamix along with the 2 cloves of garlic, and blend until desired consistency is reached.</p>
<p>— 4) Roughly slice the romaine lettuce leaves into bite-sized pieces and toss into a serving bowl.  Or, another method is to tear the leaves by hand into smaller pieces. (OR, you could even serve the leaves whole and intact and serve with the dressing as a dip!)</p>
<p>— 5) Cut the centers out of the red peppers, then slice the red peppers, carrots &amp; cucumbers all into bite-sized chunks, and add to your salad.</p>
<p>— 6) Drizzle dressing over salad or offer it on the side&#8230;your lunch or dinner is now served; enjoy!</p>
<p>* I n s p i r a t i o n *<br />
— I am not anti- superfood or anti- supplement, I just find that I don&#8217;t need them that much.  I personally prefer the &#8220;spacious&#8221; foods&#8230;fruits and vegetables.</p>
<p>— I feel good on a low fat raw vegan diet!  But I don&#8217;t prescribe to any diet with any religious fervor&#8230;I still listen to my body.  For example, in the winter I find that I need more fat to stay warm&#8230;e.g., nuts. When you do eat nuts, try to only buy ones that still have the shells on them, so that you eat them more slowly&#8230;and hence don&#8217;t overeat. <img src='http://www.happyhealthydiners.com/wp-includes/images/smilies/icon_biggrin.gif' alt=':D' class='wp-smiley' /> </p>

— Cabbage<br />
— Zucchini<br />
— Cilantro<br />
— Corn on the cob<br />
— Cherry Tomatoes<br />

<p>* P r e p a r a t i o n *<br />
— 1) Using your food processor&#8217;s shredder blade, shred cabbage, zucchini, cilantro in food processor; transfer to serving platter</p>
<p>— 2) Slice corn off of cob(s); transfer to serving platter</p>
<p>— 3) Replace shredder blade with S-blade</p>
<p>— 4) Place cherry tomatoes &amp; hot pepper into food processor</p>
<p>— 5) Squeeze juice of lime and orange into food processor as well</p>
<p>— 6) Blend until desired consistency</p>
<p>— 7) Pour over top of salad</p>

Its high in protein, high in fiber, and has only TWO ingredients so even I can make it.  Beans are an excellent source of protein and one of the cheapest.  A 30g serving of protein from beans costs 17 cents vs 75 cents for meat or protein powder.  The fresh salsa provides a great flavor and some veggies.  If you are trying to cut down on the calories to lose fat, beans are great because all the fiber fills you up without many calories.  If you are trying to gain muscle beans are great because they are so high in protein.  Win Win!</p>

&#8230;missing quantities are up to you for this one!&#8230;<br />
— Raw Corn on the Cob (yes, totally raw, NOT even so much as lightly steamed&#8230;although if you need to steam them, we won&#8217;t tell anyone&#8230;)<br />
— Beefsteak Tomatoes<br />
— Cucumbers*<br />
— 1 bunch of Cilantro<br />
— 1 Lime<br />
*unpeeled if organic; peeled if inorganic</p>
<p>* P r e p a r a t i o n *<br />
— 1) Shuck the corn, and lay out on what will be each person&#8217;s lunch or dinner plate.</p>
<p>— 2) Slice the beefsteak tomatoes into very large pieces &amp; slice the cucumbers lengthwise into quarters, setting all sliced tomatoes &amp; cucumbers along side the shucked ears of corn.</p>
<p>— 3) Chop the cilantro into large pieces, and divide among all of the plates as well.</p>
<p>— 4) Use a manual citrus juicer or a citrus hand juicer to squeeze the juice of the lime over everything on each plate, but concentrating most heavily on the cilantro and the corn.</p>
<p>— 5) Serve, and enjoy!</p>

— I wanted to share with you a REAL raw food meal, meaning one that is more typical for a REALLY quick and simple raw food dinner. This recipe involves no machines! But I do use a knife&#8230;</p>
<p>— The top question type I have been getting has been about LOVE, and mainly in the sense of asking, &#8220;How do I get more love?&#8221;</p>
<p>— The 2nd top question type I have been getting has been all things related to CORN, yes corn&#8230;go figure! So, to ward off in advance any further &#8220;So how do you prepare your corn?&#8221; type questions, here is the answer if you haven&#8217;t figured it out already: I eat my corn 100% raw and unadulterated&#8230;not even slightly steamed! <img src='http://www.happyhealthydiners.com/wp-includes/images/smilies/icon_wink.gif' alt=';)' class='wp-smiley' /> </p>
<p>— Regarding love, we are all an infinite field and we just come out of that&#8230;but with conditionings brought upon by us by our environments.  At each of our cores, we really are all innocent.  Just because many of us have been programmed with &#8216;negative&#8217; and/or &#8216;ignorant&#8217; things, through no faults of our own, this does not make our inner, innocent selves out to be bad&#8230;</p>
<p>— So we REALLY need to love OURSELVES no matter what!
